Quinoa Black Bean Bake

What you'll need

This recipe uses all pantry staples. No chopping, dicing, or boiling required!

Add all ingredients except for the shredded cheese to a 9x13 baking dish.


Stir all of the ingredients together so that they are well combined.


Cover tightly with foil. This helps the casserole cook by preventing steam from escaping.


After 30 minutes, remove from the oven and stir. The quinoa should be cooked through. Cook for another 15 minutes to thicken the casserole.


Once thickened, remove from the oven and top with cheese. Return to the oven to melt the cheese.


Let rest for 5 minutes before slicing. Serve with lime, cilantro, and avocado.
