Simmer chickpeas for at least 10 minutes or use hot chickpeas cooked from dry. This softens them and makes the hummus creamier.
Step 1

In a food processor with a standard blade attachment, process together the tahini and lemon juice for about a minute.

Add the chickpeas and process on low. Drizzle in olive oil while the food processor is running.

Drizzle in ice water while the food processor is running until you reach desired hummus consistency.

Add in sliced garlic, salt, and any add-ins like jalapeno. Process until the garlic is just broken down, about 30 seconds.
