Made with breaded, lightly pan-fried eggplant and your favorite pasta & sauce!
Sprinkle the eggplant with salt to "sweat" (remove extra moisture)
Bread the eggplant: dip in egg/milk mixture, then flour, then breadcrumbs

Pan fry the eggplant until golden brown on each side
Assemble the pasta, sauce, eggplant and mozzarella in a baking dish
Bake until the cheese is melted then top with pesto and basil
