Pan-fried gnocchi is tossed with roasted tomatoes, chickpeas, and a few simple but flavorful ingredients in this 30 minute meal!
Basil, Chickpeas, Gnocchi, Grape or Cherry Tomatoes, Garlic, Butter, Olive oil
Combine chickpeas, olive oil, garlic, tomatoes, and salt in an 8x8 baking dish. Roast at 400F for 20-25 minutes.
Meanwhile, pan-fry the gnocchi in butter in a large cast-iron skillet until soft and golden.
Once golden, add in the garlic and basil. Cook another 1-2 minutes, until aromatic.
Finish the dish by adding the roasted cherry tomatoes and tasting for seasonings. Enjoy!
