EASY MUSHROOM FRITTATA

Mushrooms, goat cheese and veggies combine in this simple but satisfying breakfast!

Ingredients

mushrooms eggs goat's cheese red bell pepper olive oil butter kale garlic milk salt & pepper

Sauté mushrooms and peppers in a hot cast iron pan

Step 1

Add in the butter, kale, garlic and salt. Sauté until wilted.

Step 2

Crumble goat cheese over the veggies.

Step 3

Pour in the egg mixture.

Step 4

Bake until eggs are set, about 15 minutes

Step 5

Enjoy within 3-4 days. It's great for meal prep!
