Herby Potato Salad

This herby potato salad is packed with spring flavors and is vegan! It's a great option for potlucks or when you need a healthy side dish.

Ingredients

Simmer potatoes with salt for 8-12 minutes, until soft. Reserve at least 1/2 cup of potato cooking liquid.
