This potato salad is made with baby potatoes, a zesty and herby dressing, and no mayo. It's perfect as a spring side dish!

Boil the sliced baby potatoes until fork tender.
Reserve at least 1/2 cup of the salty potato water to use in the potato salad dressing.

Make the herby dressing by combining the fresh herbs, olive oil, 1/4 cup potato water, garlic, white wine vinegar, and Dijon in a blender.
Step 2

Toss together the potatoes and the herby dressing until well combined. Garnish with additional fresh herbs and sliced green onion.
