This potato salad is made with baby potatoes, a zesty and herby dressing, and no mayo. It's perfect as a spring side dish!

Baby potatoes Olive oil Chives, Dill Cilantro Lemon juice and zest White whine vinegar Dijon mustard, Garlic

Ingredients

Boil the sliced baby potatoes until fork tender. Reserve at least 1/2 cup of the salty potato water to use in the potato salad dressing.

Step 1

Make the herby dressing by combining the fresh herbs, olive oil, 1/4 cup potato water, garlic, white wine vinegar, and Dijon in a blender.

Step 2

Toss together the potatoes and the herby dressing until well combined. Garnish with additional fresh herbs and sliced green onion.
