Lentil & Potato Bowls

French lentils, roasted baby potatoes, and arugula are paired with a creamy lemon tahini dressing in these vegan grain bowls. These are perfect for meal prep!

Main Ingredients

French lentils Baby potatoes Pumpkin seeds Arugula

Slice baby potatoes in half. Toss with olive oil and salt. Place cut side down on a sheet pan.

Step 1

Roast the potatoes until golden and fork tender. They should be soft and easily pierced with a fork.

Step 2

Make the lemon tahini dressing by whisking together lemon juice and zest, tahini, and coconut aminos. This dressing is also great for salads!

Step 3

Build the lentil bowls. Divide arugula, apple, cooked lentils, and roasted potatoes between 4 bowls. Drizzle with tahini.
