Vegan lentil loaf is a meatless twist on classic meatloaf that's made with plant-based staples like lentils and chickpeas. It's flavorful, sliceable, and topped with a classic meatloaf sauce!

Ingredients

Cook lentils in vegetable broth until tender. This will take 15-20 minutes.

Pulse together onions and mushrooms in a food processor until mostly broken down.

Stir together all of the lentil loaf ingredients. Press the mixture into a lightly oiled loaf pan.
