Ingredients

Roast the sweet potatoes at 400 for 50-60 minutes. Poke sweet potatoes with a few holes to allow air to escape.

Step 1

Roast sweet potatoes until fork tender. Roasting time will vary depending on sweet potato size.

Step 2

Make the taco-seasoned lentil filling for the stuffed sweet potatoes by combining cooked lentils, taco seasonings, and tomato sauce.

Step 3

Simmer together the lentils and seasonings for 5 minutes, or until heated through. Taste for seasonings.

Step 4

Add lentils to each sweet potato. Stir lentils and sweet potato together. Top each sweet potato with guacamole, salsa, and pumpkin seeds.
