One Pot Orzo with Roasted Butternut Squash

The orzo is made in one pot while the butternut squash roasts in the oven.

What you'll need

In a medium saute pan, saute the shallot and garlic in butter until golden and aromatic.


Add in the remaining ingredients, except for the orzo. Bring liquid to a simmer.


Once simmering, add in the orzo. Cover and cook for 12 minutes, stirring every 3-4 minutes.


The orzo is ready when tender and most of the liquid is absorbed.


Meanwhile, roast the butternut squash at 425F for 30-35 minutes, until it is tender and golden.


Stir the butternut squash into the orzo. Add a splash of balsamic vinegar and a handful of parmesan.
