One Pot Pesto Orzo with Mushrooms

This simple but flavorful pesto and mushroom orzo is made in just one pot in 30 minutes! It's perfect for weeknight meals.

Mushroom Orzo Ingredients

Heat oil in a pot. Once hot, add shallots, mushrooms, and salt. Cook until mushroom are softened.

Add orzo and toast for 1-2 minutes, stirring frequently.

Drizzle a small amount of vegetable broth to deglaze the pot. Then add remaining broth.

Bring to a rapid simmer. Then reduce to a simmer and cover. Cook until orzo is cooked through, about 10 minutes.
