Puff Pastry Tarts

Main Ingredients

These tarts are made using frozen puff pastry sheets, peaches, blueberries, corn starch, lemon juice, and sugar.

Start by rolling out the thawed puff pastry into a 12x16 square. Cut into 4 rectangles.

2. In a small bowl, mix together the blueberries, lemon juice, sugar, vanilla extract, and corn starch. Repeat with the sliced peaches.

3. Add a layer of blueberries to the puff pastry rectangles. Leave an inch uncovered around the edge of the pastry sheet.

4. Fold in the edges of the puff pastry over the edges of the blueberries. Top with sliced peaches.

5. Bake at 400F for 18-20 minutes, until the puff pastry is golden and the filling is bubbling. Top with powdered sugar.

Serve with a scoop of vanilla ice cream and enjoy as the perfect 4th of July dessert!
