Quinoa Pesto Bake 

This dump & bake casserole features quinoa, pesto, and tomatoes. Easy prep perfect for weeknight meals or meal prep. 

Ingredients

In a oiled casserole dish, add quinoa, pesto, chickpeas, sun-dried tomatoes, cherry tomatoes, seasonings, and heated broth. Stir to combine.

Cover tightly with foil or a lid. Bake at 375F on the middle rack for 30 minutes, or until is mostly cooked through.

Stir in torn spinach so that it is mostly covered.

Top with mozzarella and bake for another 15 minutes, or until casserole is firmed up and cheese is melted.

Rest casserole for 5 minutes before slicing. Garnish with lemon zest and freshly ground black pepper.
