Red Lentil Burgers

These spicy red lentil burgers are veggie-packed and freezable. They're easy to make and vegetarian and ready in just about 30 minutes.

Ingredients

Cook the red lentils until softened (1 cup lentils, 2 cups water). Simmer until just softened, about 8 minutes.

Transfer lentils to a fine mesh sieve to drain. Lightly pat with a paper towel to remove moisture.

While the lentils are cooking, saute the peppers, carrots, and onions until softened.

Form 6 patties. Cook for 3-4 minutes on each side on a lightly oiled skillet on medium heat.
