red lentil curry

Packed with inexpensive, healthy ingredients and ready in just over 30 minutes!
What you'll need
red lentils curry powder cumin coriander seed ginger
sweet potato yellow onion salt vegetable broth coconut milk
Press "sauté". Once it reads "hot" add the olive oil. Add sweet potato and onions, sautéing until onions are soft.
Add minced garlic and ginger and sauté a minute more. Add spices and bloom for 30 seconds.
Deglaze the pot with vegetable broth. Add remaining liquid and red lentils.
Cook on high pressure for 5 minutes. Once pressure has released naturally, stir in fresh spinach.
Serve topped with cilantro, sliced green onions and lime with a side of white rice.
