Red Lentil Stew
What you'll need
Ras el hanout is a Moroccon spice blend that adds a ton of warmth and flavor to lentil soup.
Start by sauteing the onion and carrot until softened and golden.
Add in the minced garlic and ginger. Continue cooking until aromatic and golden.
Add in the spices (ras el hanout) and vegetable bouillon. Deglaze the pot with a splash of water.
Add in the liquids (coconut milk, water) and bring to a rapid simmer.
Continue simmering until the red lentils are softened and completely cooked through. It will be a thick stew.
Serve garnished with fresh cilantro and a squeeze of lime juice. Enjoy!
