Rice and Bean Casserole with Sweet Potatoes

This rice and bean casserole is a dump & bake that features sweet potatoes, smoky flavors, and a touch of spice. 

Ingredients

Start by heating a skillet with oil over medium heat. Add diced peppers, onions, and sweet potatoes and cook until onions are golden.

Sprinkle salt and add garlic, jalapenos, diced chiles, and aboba sauce. Continue cooking, stirring frequently, until the garlic is golden.

Stir in the spices and toast for 30 seconds, stirring frequently.

Pour in the vegetable broth and bring to a simmer over medium-high heat.

Transfer to an oiled 9x13 baking dish. Cover with foil or an oven-safe lid. Bake at 375F for 30 minutes.

Remove lid and stir casserole. Sprinkle with cheese and bake for another 10 minutes, cooking until the cheese is melted and bubbly.
