Orange sweet potato, salt, and oil are the only required ingredients
Start by using a potato peeler to peel the skin from the sweet potato. This is optional but recommended!
Dice the sweet potato into one inch cubes. The sweet potato pieces should be similarly sized for even cooking.
In a large bowl, toss the diced sweet potato with oil, salt, and seasonings. Make sure each piece of sweet potato is coated.
Spread the sweet potato out on a parchment paper-lined baking sheet. Don't overlap any of the pieces.
Roast at 400F for 30 minutes total. Remove from oven and stir after 15 minutes for even cooking.
The sweet potato is ready when soft and tender inside and golden and almost blackened on the outside.
Serve sweet potato in bowls, wraps, and tacos! Keep refrigerated for 4-5 days for best quality.
