spinach artichoke pasta

This pasta it's made in one pot in less than 30 minutes! It uses cashew cream and lemon zest to make a rich and zesty dairy-free cream sauce.

Spinach Artichoke Pasta

1 tablespoon olive oil 2 medium shallots ½ teaspoon kosher salt 3-4 cloves garlic 3 and ½ cups vegetable broth 8 ounces fettuccine 3 tablespoons nutritional yeast 14 ounce can artichoke hearts ¼ teaspoon lemon zest ¼ teaspoon black pepper 4 cups fresh spinach


Saute shallots & garlic. Add broth and seasonings and bring to a simmer, then add pasta. Cook until al dente.

Sauté & simmer

Blend the cashew cream ingredients until smooth. This is added to the pasta to make it creamy!

Cashew cream

Pour the cashew cream into the pasta. Simmer until thickened to desired consistency. Enjoy!
