Spring Arugula Salad

with lemon vinaigrette

This simple arugula salad features toasted almonds, fresh Parmesan, and a light and zesty lemon vinaigrette. It's great as a side salad and comes together in just 15 minutes!

Arugula Parmesan Slivered almonds Lemon juice and zest White wine vinegar Olive oil Honey

Ingredients

Toast the slivered almonds. It will take just about 2-3 minutes and they will be golden and aromatic when ready.

Step 1

Make the lemon vinaigrette dressing. Simply mix together the olive oil, lemon juice, shallots, and other ingredients in a jar or shake to combine.

Step 2

Toss together the lemon vinaigrette with the arugula. Use tongs or salad servers to coat the arugula in the vinaigrette.

Step 3

Add the toasted almonds and freshly grated Parmesan cheese. Serve the salad immediately. Enjoy!
