Sweet potatoes and fresh veggies come together in this smoky and lightly spicy vegan soup!

Main Ingredients

Sauté onions, peppers and celery in olive oil until softened


Add remaining ingredients. Bring to a boil then reduce to a simmer.


Simmer until sweet potatoes are fork tender, about 15-20 minutes.


Add in a few handfuls of kale. Let wilt, then serve. Optionally add okra on top.
