Sweet Potato Burger Buns

Baked mashed sweet potato adds a ton of flavor to these burger buns, which freeze well and are straightforward to make!

Start by proofing the yeast. Combine warm water, sugar and yeast, and then cover for 10 minutes. The yeast will appear frothy.

Add flour 1 cup at a time, mixing until a shaggy dough is formed.

Turn dough onto a clean, lightly floured surface. Knead dough until smooth and elastic, about 5-6 minutes.

Lightly oil a large mixing bowl. Add the dough, tossing in the oil. Cover with a clean towel and let rest until double in size.

Punch the dough. Then roll it out onto a clean surface, kneading just a few times.
