3 bean chili

This hearty and flavorful three bean chili is ready in just 30 minutes using healthy pantry staples. This cozy recipe is perfect for weeknight meals!

bell peppers red onion  garlic  Thai red curry paste chipotle chili powder cumin kidney, pinto, and black beans canned diced tomatoes tomato sauce vegetable broth

Ingredients

Sauté the onions and bell pepper until softened. Add garlic and continue cooking until aromatic.

Cook the veggies

Bloom for just 1-2 minutes. Then add the remaining ingredients to the pot.

Add red curry paste

Cover the pot and let simmer for at least 15 minutes and up to an hour. The longer it simmers, the more flavorful!

Bring up to a simmer

Serve with crackers or cornbread and top with shredded cheddar, sour cream, cilantro, and avocado!
