Tofu & Noodle Stir Fry

This vegetarian stir fry features tofu, pre-cooked noodles, and a simple but flavorful stir fry sauce. It comes together in just 15 minutes and is perfect for weeknight meals!

Ingredients

Make the stir fry sauce by whisking together soy sauce, vegetable broth, garlic, ginger, sesame oil, and honey. Set aside.

Step 1

In a large skillet or wok over medium-high heat, add neutral oil. Add the tofu and 1/3 of the stir fry sauce. Cook for 3-4 minutes.

Step 2

Add the frozen vegetable blend to the skillet. Cook until thawed and vibrant, about 2-3 minutes.

Step 3

Add the noodles and the rest of the stir fry sauce. Cook another 1-2 minutes to heat up the noodles.

Step 4

Serve topped with sesame seeds, sliced scallions, and nori or enjoy it as is. Keep leftovers refrigerated for 3-4 days.
