Banana Flour Soy milk Vegan butter Sugar

Cinnamon Baking soda Baking powder Flax egg Cinnamon

Choose brown speckled bananas for the sweetest muffins. Mash the bananas until smooth, then measure out 1 cup.

Step 1

Whisk together all dry ingredients in a medium mixing bowl. Then stir in the wet ingredients, including the banana. Don't overmix the batter!

Step 2 and 3

Add 1/3 cup batter to lightly-oiled muffin tins to make 9 vegan banana muffins.

Step 4

Bake the muffins on the center oven rack at 350F for 18-20 minutes. They are ready when a toothpick inserted in the center of a muffin comes out clean.

Step 5

Banana muffins freeze well! Let cool to room temp before transferring to an airtight container or freezer bag. Freeze up to 3 months.

Freezing Tips

You can fold in up to 1/2 cup chocolate chips or nuts to the muffin batter before baking.
