This veggie-packed fried rice is ready in only 15 minutes using healthy and versatile ingredients! It's perfect for quick lunches or meal prep.

2 cups cold white rice 1 tablespoon sesame oil 1 + ½ cups frozen edamame 1 cup frozen peas  1 cup carrots 1 red or green bell pepper 3 tablespoons soy sauce 2 tablespoons nutritional yeast  1 tablespoon garlic chili sauce ½ cup sliced green onions


Stir fry the thawed vegetables on high heat for 2-3 minutes. They should be tender but still crisp.

Cook the veggies

Add cold white rice, soy sauce, nutritional yeast, garlic chili sauce. Cook another few minutes to fry the rice.

Add the rice

Garnish with sesame seeds, green onions, and roasted seaweed. Taste for soy sauce & nutritional yeast. Enjoy!
