Ingredients
Yukon gold potatoes vegan butter carrot celery yellow onion table salt minced garlic
all purpose flour vegetable broth full fat coconut milk soy sauce nutritional yeast black pepper
1. Sauté onion, celery, carrot in butter. Add garlic. 2. Add flour and cook.
3. Slowly whisk in vegetable broth. 4. Add remaining ingredients. Boil potatoes until soft.
5. Use immersion blender or masher to reach desired consistency. 6. Stir in nutritional yeast, taste for salt & pepper.
Don't forget the toppings! Add tempeh bacon crumbles, vegan cheese and chives for a tasty meal.
