These soft and tender pumpkin muffins use classic baking ingredients and are made in one bowl!

What you'll need

Pumpkin pie spices, olive oil, pumpkin puree, non-dairy milk, maple syrup, flour

Stir together all dry ingredients in a medium mixing bowl.

Fold in the wet ingredients, careful not to overmix.

Step two

Portion out muffin batter into lightly oiled or lined muffin tins.

Bake at 350F for 18-20 minutes, until a toothpick inserted in the center comes out clean.

Keeps for 3-4 days at room temperature or for up to 3 months in the freezer.
