Vegan Tater Tot Green Bean Casserole

This from-scratch tater tot green bean casserole is full of mushrooms, green beans, and tater tots. The ultimate vegan comfort food.

Ingredients

Start by sauteeing mushrooms and onions in olive oil until onions are lightly browned and mushrooms have released most of their juices.

Add meatless ground meat, sprinkle with thyme, pepper, and garlic. Cook until the meat is browned.

Make the roux by melting butter. Sprinkle in the flour, stirring to combine. Cook until the flour is lightly golden.

Slowly whisk in the almond milk. Simmer until sauce is thick enough to coat back of a spoon. Season with soy sauce and pepper.

Layer mushrooms and onions, cooked green beans, season with salt and pepper, roux, and tater tots. Bake at 375F for 30 minutes.
