Vegetarian Caesar Salad Dressing

This vegetarian Caesar salad dressing adds zest, brightness, and tang to more than just a Caesar salad. Comes together in 15 minutes.
(Can skip if using a strong blender). Soak cashews in boiling water for 10 minutes,
cover with cool water overnight to soften nuts.
Add drained cashews and remaining ingredients into blender. Blend until smooth, about 1-2 minutes.
Add additional water to thin the dressing. Taste for seasoning, adjusting for salt and tang.
