Vegetarian Caesar Salad with Cashew Caesar Dressing

This vegetarian Caesar salad is super easy to make and features a cashew Caesar dressing, savory chickpeas, and homemade croutons. 

Ingredients

Add chickpeas to a baking sheet. Drizzle with olive oil and sprinkle with sat. Combine together and then roast for 20 minutes at 400F.

Tear or cut bread into 1-inch pieces and add to sheet pan. Whisk miso and melted vegan butter together.

Drizzle over bread and chickpeas, tossing to combine. Bake for an additional 10-15 minutes.

Serve croutons and chickpeas over romaine and Caesar dressing. Top with Parmesan, lemon, and black pepper.
