Vegetarian Mushroom Barley Soup

This hearty vegetarian stew features barley, mushrooms, and a whole lot of rich & savory flavors!

Ingredients

Start by sautéing the mushrooms in a Dutch oven or large pot over medium heat until they are golden and tender.

To the mushrooms, add onion, celery, and carrots. Continue cooking until the onions are softened. The mushrooms should be deep brown at this point.
