Vegetarian Pinto Bean Tostadas

These vegetarian pinto bean tostadas have pinto beans, avocado cream, and red pickles. They're perfect for quick weeknight dinners!

Ingredients

Simmer pinto beans, bell pepper, and seasonings for at least 10 minutes in a sauce pot. If using dried beans, add 1/4 cup of vegetable broth or water.

Slice red onions into strips and put them in a mason jar. Simmer vinegar, water, salt, and sugar until sugar and salt is dissolved.
