Vegetarian Taco Pasta

What you'll need

A mix of fresh ingredients (peppers, onions) and pantry staples (beans, pasta).

Start by sauteing the peppers and onions until softened and golden.

Add in all of the ingredients except the reserved pasta water and sour cream.

Stir everything together. Simmer until warmed through, just a few minutes.

Stir in the sour cream and pasta water to form the sauce. Add the shredded cheese.

Stir everything together and garnish with fresh cilantro and green onions. Enjoy!
