Vegetarian Black Bean Enchilada Casserole

This enchilada casserole is loaded with a satisfying tofu and black bean filling. Ready in under 1 hour.

Ingredients

Start by sauteing diced yellow onion, bell pepper, and crumbled tofu in a skillet with olive oil. Cook until onions are softened, about 5 minutes.
