To make the salad, start by mashing together the white beans with the lemon juice and tahini.

Fold in the add-ins: dill, sliced celery, and diced shallot. Feel free to add extra veggies like carrots or peppers.

Serve with arugula, cucumber, and avocado in a pita for a simple and nourishing lunch.
