Air Fryer Roasted Potatoes
It's easy to make buttery soft and crispy potatoes in the air fryer using just 3 ingredients. These potatoes are great for bowls, tacos, and more!

Ingredients

pound
Yukon gold potatoes
see note #1
1
teaspoon
canola oil
or other neutral oil
¼
teaspoon
kosher salt
adjust to taste
Instructions
Peel potatoes if desired. Dice the potatoes into one-inch cubes.
In a large bowl, toss diced potatoes with oil and salt until well coated.
Transfer potatoes to the air fryer rack. Try not to overlap the potato pieces.
Air fry at 400F for 12-14 minutes. Remove from the air fryer and stir at the 6 minute mark.
The potatoes are ready when tender on the inside and golden and puffy on the outside. Enjoy immediately.

Notes
Yukon gold
: This recipe also works with Russet or new potatoes, but I think Yukon gold has the best texture when air-fried.
Leftovers and reheating
: Refrigerate leftover potatoes in a closed container for 3-4 days. Reheat in the air fryer at 350F for 2-4 minutes.
