This ultra-creamy vegan soup is made with dry great northern beans in the Instant Pot using simple but flavorful pantry staples!

Add oil to the Instant Pot. Add the celery, onion, and carrots. Saute until softened, then add the garlic.
Saute the veggies
Bloom the spices for another 30 seconds to enhance their flavor. Then deglaze the pot with vegetable broth.
Add the spices
And add the vegetable broth. Cook on high pressure for 17 minutes if using soaked beans.
Add white beans
Immersion blending the soup after cooking makes it creamier. You can also use a blender.
