Quick Pickled Onions

Ingredients: Water Cider vinegar Salt Sugar Red onion

Slice red onion into thin strips. You can also use white or yellow onion but the liquid won't turn pink.

Step 1

Add all of the sliced onions to a quart-sized mason jar or a similarly sized container. Use a spoon to press the onions down into the jar.

Step 2

In a small mixing bowl, whisk together all of the brine ingredients until the sugar and salt are dissolved.

Step 3

Cover the sliced onions in brine. They should be fully submerged. If not, just add extra water.

Step 4

Let the onions rest at least an hour before using. Keep leftovers refrigerated.

Step 5

Serve quick pickled onions on grain bowls, in tacos and burritos, and on salads. They are an easy way to add flavor to dishes!
