This is a wonderful snack to keep on hand for when you need a little between-meal boost. I store these bites in the freezer for a quick preworkout snack, but they’re also great as a post-dinner dessert.
1cup (10 to 12 dates)pitted Medjool dates, sliced in halfsliced in half
1cuprolled oats
¼cuphemp hearts
¼cupcreamy peanut butter
4tablespoonscocoa powderdivided
3tablespoonsoat milkor milk of choice
2tablespoonspowdered sugar
Instructions
To a food processor with a standard blade attachment, add the sliced dates and oats. Pulse until the dates are mostly broken down and the oats are a sandy texture.
Add the hemp hearts, peanut butter, and 2 tablespoons of the cocoa powder. Process just a few seconds to combine the ingredients. Add 2 tablespoons milk and process until the “batter” holds together. Add the remaining tablespoon of milk as needed.
Roll the batter into 12 balls, about the size of a ping pong ball. In a small bowl, whisk together the remaining 2 tablespoons of cocoa powder and the powdered sugar. Roll each ball in the powder, tossing to coat. This step is optional but adds an extra touch of sweetness and extra chocolate.
Enjoy immediately or refrigerate to chill. These also freeze well.
Notes
For mocha flavor, add ½ teaspoon espresso powder and use strong coffee or cold brew in place of milk.
