Whole carrots are sliced into coins then air fryer for just 12 minutes in this simple side dish. Optionally, sprinkle the carrots with brown sugar for a sweet option!
If you prefer, peel the carrots. If not, rinse the carrots well and pat dry.
Slice carrots on a bias (diagonal) into 1-inch coins. Aim for uniform width.
In a bowl, toss the carrots with oil, salt, and pepper (omit pepper if adding brown sugar).
Transfer to the air fryer basket and spread in an even layer. Air fry at 350F in a preheated air fryer for 12 minutes, until tender.
If going the sweet route, shake the carrots into one corner of the air fryer. Sprinkle with the brown sugar. Keeping them in this clump in the corner, return the basket to the air fryer and cook for another 2 minutes.If going the savory route, enjoy as-is or continue cooking for 2 more minutes, as needed.
The carrots are ready when tender and easy to pierce with a fork. Enjoy!

Air fried carrots are best within 3-4 days. Keep refrigerated in a closed container.
As you might hope, they reheat well in the air fryer! Air fry at 325F for just 2-3 minutes, until hot. Alternatively, microwave for about a minute to heat them through.
Want to add spice? Add 1 tablespoon of chili garlic sauce or sambal oelek when tossing the carrots in oil.
I recommend moving the carrots into a corner because this keeps the brown sugar from falling through the air fryer rack slats.
