Tender roasted carrots are easy to make in the air fryer! My recipe for air fryer carrots features a simple salt & pepper option and a sweet brown sugar option. This recipe is ready in under 20 minutes and uses whole carrots.

Whenever I buy a bag of carrots for soup, I always seem to end up with a mostly full bag sitting in my fridge for weeks because I have no plans for them. On a recent night when I needed a quick veg to add to dinner (with braised lentils and baked potatoes, yum!) I decided to air fry some of those forgotten carrots.
The result was just as good as oven roasted carrots! With just a sprinkle of salt, spritz of oil, and 12-14 minutes in the air fryer, the carrots become perfectly tender and golden.
This recipe includes a super simple salt & pepper carrot option or brown sugar carrots, which are my personal favorite.
The carrots are air fried at a lower temperature (350F) for a bit longer than most recipes because this allows them to be tender throughout without the risk of burning.
Ingredients

- Whole carrots: This recipe works with peeled or unpeeled whole carrots, but I prefer to keep the recipe quick and easy by not peeling the carrots. I have not tested this recipe with baby carrots, but I'm guessing it would work.
- Oil: Any oil works here, like canola or olive oil.
- Brown sugar: This simple addition enhances the natural sweetness of carrots. It's optional, so feel free to stick to just salt and pepper.
- Want to add spice? Add 1 tablespoon of chili garlic sauce or sambal oelek when tossing the carrots in oil.
How to make
All of my air fryer recipes are tested in an Instant Vortex 6 quart air fryer.

- Slice carrots on a bias (diagonal) into 1-inch coins. Aim for uniform width. Spritz or toss with a small amount of oil, just a drizzle, and sprinkle with salt. If going the savory route, add black pepper, to taste. Air fry at 350F in a preheated air fryer for 12 minutes.
- If going the sweet route, shake the carrots into one corner. Sprinkle with the brown sugar. Keeping them in this clump in the corner, return to the air fryer and cook for another 2 minutes. I recommend this because otherwise the brown sugar falls through the air fryer slats, and the goal is melt the sugar onto the carrots!
- The carrots are ready when tender. Enjoy!
Storage notes
- Air fried carrots are best within 3-4 days. Keep refrigerated in a closed container.
- As you might hope, they reheat well in the air fryer! Air fry at 325F for just 2-3 minutes, until hot. Alternatively, microwave for about a minute to heat them through.

Air Fryer Carrots
Ingredients
- 16 ounces (1 pound) whole carrots
- 1-2 teaspoons olive oil any oil works
- ¼ teaspoon salt
- freshly ground black pepper to taste
- 1 tablespoon light brown sugar optional
Instructions
- If you prefer, peel the carrots. If not, rinse the carrots well and pat dry.
- Slice carrots on a bias (diagonal) into 1-inch coins. Aim for uniform width.
- In a bowl, toss the carrots with oil, salt, and pepper (omit pepper if adding brown sugar).
- Transfer to the air fryer basket and spread in an even layer. Air fry at 350F in a preheated air fryer for 12 minutes, until tender.
- If going the sweet route, shake the carrots into one corner of the air fryer. Sprinkle with the brown sugar. Keeping them in this clump in the corner, return the basket to the air fryer and cook for another 2 minutes.If going the savory route, enjoy as-is or continue cooking for 2 more minutes, as needed.
- The carrots are ready when tender and easy to pierce with a fork. Enjoy!
