Air Fryer Roasted Sweet Potatoes
Choose from salt & pepper-seasoned sweet potato or a spicy & smoky seasoning blend. Either way, the result is tender and fluffy diced sweet potato that cooks in half the time as oven baked diced potatoes.

Instructions
Clean the sweet potato well, or peel the skin if you prefer. Carefully slice into roughly ½-inch pieces.
In a medium bowl, toss the diced sweet potato with 1 teaspoon oil, ¼ teaspoon salt, black pepper, and optional seasonings.
Air fry at 375F for 15-18 minutes, shaking the basket halfway through. The sweet potatoes are ready when tender and puffy in appearance.
Notes
Sweet potato:
I typically use one large or two small sweet potatoes.
Oil:
Some oil is still needed to crisp up the sweet potato. Use 1 teaspoon oil per 1 pound sweet potato.
You can peel the sweet potato or not, either way works for this recipe and it's just a matter of preference.
