Butter beans are simmered in a garlicky, gingery miso broth in this super easy and nutritious dinner. Pair with rice and roasted cabbage for a quick and easy meal.

I first developed this recipe for my cookbook, Vegetarian for Dinner. It's such a practical, low effort dish but the result is butter beans that are super flavorful, gingery and garlicky.
The miso adds some nice saltiness that's balanced by a splash of bright rice vinegar and fresh green onions.
If you can't find butter beans, this recipe will work with standard white beans, which have a different texture (and are smaller) but will pair with the miso broth nicely.
Ingredients

- Butter beans: Butter beans are also known as lima beans or large butter beans. Avoid seasoned butter beans, which usually include pork and additional seasonings. If unable to find canned butter beans, cook 8 ounces dry butter beans to yield the amount needed for the recipe.
- Miso: I typically use yellow miso because it's what I keep on hand, but this recipe works with any variety of miso.
- Ginger and garlic: Fresh are best for this recipe. I like to grate the ginger into a paste using a Microplane, but mincing also works.
- Rice vinegar: This adds a splash of acidity.
- Chili garlic sauce: This is optional but I like to add it for a touch of spice. It's typically found in the International aisle. Adjust to taste, as some brands are much spicier than others.
Cassidy's tips
- In my cookbook I serve the butter beans with rice and pan-fried cabbage. The pan-fried cabbage is delicious but a bit more hands on than Miso Roasted Cabbage.
- If too much liquid cooks off while simmering the beans, add ½ to 1 cup of water to return the brothiness to the dish without oversalting it. Or add vegetable broth for even more saltiness!

Brothy Miso Butter Bean Bowls
Ingredients
- 1 bunch green onions
- 1 tablespoon neutral oil divided
- 4 cloves garlic minced
- 1 inch ginger grated into a paste
- 1 tablespoon yellow miso see note #1
- 1 tablespoon water
- 1 tablespoon rice vinegar
- 1 tablespoon soy sauce
- 1 tablespoon garlic chili sauce optional
- 2 16 ounce cans butter beans drained and rinsed; see note #2
- 1 cup vegetable broth more as needed
- kosher salt to taste
- fresh chopped cilantro and freshly ground black pepper, for serving
Instructions
- Thinly slice the green onions. Separate the white and green parts.
- Heat a medium pot over medium heat. Drizzle with 1 tablespoon of oil. Once hot, add the garlic, ginger, and the white parts of the green onions. Cook until aromatic and golden, about 2 to 3 minutes.
- In a small bowl, whisk together the miso and water. This thins miso and makes it easier to distribute into the sauce. To the pot, add the thinned miso, rice vinegar, soy sauce, and optional chili garlic sauce. Stir to combine.
- Add the drained butter beans and broth. Bring to a rapid simmer over medium-high heat, then reduce to a very gentle simmer over low heat. Simmer, uncovered, for at least 10 minutes. If simmering longer, replenish the liquid with water or broth, as needed.
- Serve butter beans garnished with the green parts of the green onions, cilantro, and black pepper. Serve over rice with miso roasted cabbage to make a meal.
Notes
- Butter beans: Butter beans are also known as lima beans or large butter beans. Avoid seasoned butter beans, which usually include pork and additional seasonings. If unable to find canned butter beans, cook 8 ounces dry butter beans to yield the amount needed for the recipe or use two cans of cannellini beans. At Kroger I found unseasoned butter beans in the International aisle.
- This recipe is from my cookbook Vegetarian for Dinner. It's served with pan-fried cabbage in the cookbook, whereas in these photos I use my Miso Roasted Cabbage recipe.
