    I'm sharing 30 of my favorite easy, fuss-free vegetarian recipes that combine flavor, pantry staples and seasonal vegetables into nourishing meals!

    Readers tell me again and again that getting a balanced vegetarian dinner on the table that makes everyone happy is one of their biggest struggles.

    My recipes are made with that in mind. Making the switch to vegetarian and vegan meals doesn't mean you have to spend more time in the kitchen or sacrifice your favorite comfort foods.

    I love this topic so much that I made a cookbook about it! My cookbook Vegetarian for Dinner is all about vegetarian dinners and meals. The recipes below are not in the cookbook, so check it out if you're interested in even more easy healthy vegetarian dinners!

      I am very interested in increasing the amount of plant based meals in my household. Some members of my family need to eat low FODMAP foods. Could you please include more recipes to cater for low FODMAP diets.

        Hi Marlene! I wouldn't consider myself an expert in the FODMAP diet but will definitely look into making some FODMAP friendly recipes for the blog. Have you seen https://www.fodmapeveryday.com/ ? This blog has a lot of FODMAP friendly plant-based recipes. I bet it would be a great resource.
